Okay, I’ve been spending a little while catching up on blog posts and finally we’re at yesterday! I had a really bad day yesterday, just woke up on the wrong side of the bed so I was just having a bit of a grumpy day all round.
On the food front, I had the rest of my sausages in a sandwich which was nice and another Mindful Chef meal, so it was a good day for food. That said, I did skip breakfast again, whoops.
Breakfast – Extra Sleep
I somehow slept through three alarms so by the time I actually got up it was basically lunchtime. I also didn’t have any coffee because the last couple of days I’ve had way too much, so I’m taking a break from that.
Lunch – Sausage Sandwich
I used up the last of my sausages to make a sausage sandwich. My aunt had the same but with meat sausages, but she also fried some onions, so I had the rest of those on my sandwich too. I topped it off with some ketchup.
It was a very quick and easy lunch, which was useful as I’d already slept the morning away and I wanted to get onto finishing some of my assessments. I pretty much couldn’t taste anything outside of the ketchup and onions, but that’s not necessarily a bad thing.
Late Afternoon – Rose Green Tea Latte
Not a meal but I just felt like mentioning it. I was struggling with the no coffee thing so I decided to treat myself a little. I didn’t fancy breakfast tea, but I knew I wanted something milky. Really, I could have done with a matcha latte, but I don’t have any matcha.
So I frothed up some almond milk (almond milk never ceases to amaze me, it has some brilliant frothing abilities) and added some rose green tea. It was a very nice, interesting hot drink, and distracted me from my coffee cravings.
Dinner – Mindful Chef West Indian Curried Dahl with Quinoa
I spent the evening cooking, which was a very good way of bringing me out of my bad mood. I also popped to the shops just before I started cooking which helped too, I stocked up on some bits that I needed for a few recipes I have been interested to try.
Anyway, I completely messed up the quinoa somehow. I don’t think I cooked it properly, like it was on too high a heat for too long, maybe. Anyway I still ate it, with the curry, that was actually a little too spicy for my liking, but that day I think I needed some spice to really kick me out of my bad mood.
The curry actually tasted like something you could get from the takeaway Indian, but was probably a lot healthier. If it had been just a tad less spicy, I would have really enjoyed it. I still did enjoy it, but I had to take little breaks where I just ate green beans to combat the spice a little, as I am a wimp.
Pudding – Jude’s Vegan Salted Caramel Ice Cream
I’m not particularly fussed about ice cream, but my family have been having some ice cream after dinner more frequently than usual recently, so I decided I didn’t want to feel left out. Besides, I may as well try as many different things as I can.
Honestly I don’t think I would be able to tell the difference between a vegan ice cream and a non-vegan ice cream. This particular one was very creamy which was nice and had some nice caramel-y bits in it.
